Simmered and Roasted Turnips

Ingredients
  

For the roasted turnips

  • 1 bunch turnip roots split the bunch between the roots and greens
  • 1 tbsp everything bagel seasoning

For the turnip greens

  • 1 bunch of turnip greens split the bunch between the roots and greens
  • 1 cup vegetable broth
  • 1 tbsp coconut sugar
  • salt & pepper to taste

Instructions
 

For the greens

  • Chop and wash all the greens.
  • Add to a pot with vegetable broth and the coconut sugar.
  • Bring to a boil.
  • Turn the heat down to low and simmer for 1 hour.
  • Salt & pepper to taste.
  • Serve warm with the soup base and roasted turnips.

For the turnip roots

  • Preheat oven to 425 degrees.
  • While the greens are cooking, wash and chop the turnip roots into quarters.
  • Add them to a baking sheet.
  • Toss with Everything Bagel Seasoning
  • Roast in the oven for 20 mins.
  • Salt & pepper to taste.
  • Serve warm with turnip greens.
